  1. Wonderful post…read it all and delighted in it. I last ate a cochon au lait like this at a wedding, here in France. It was cooked on a spit over a halved oil drum filled with charcoal and vine cuttings…all this took place in the car park of a tiny village where the cochon cooked slowly all day. The spit was turned by a fan belt round a bicycle wheel which was connected to a small electric motor powered by a car battery…..happy new year:)
